Pizza crackers – I modified a cheese cracker recipe last night to make pizza crackers. They were enthusiastically endorsed as a success. Pretty close to pizza rolls in taste (and probably could be rolled up into that shape, but that seemed like too much work):
6 oz (1 1/2 cups) grated Parmesan cheese
3/4 cup flour
4 tablespoons butter (softened works better than hard)
Blend to powdery dough in food processor, then add milk and blend again into dough.
4-6 tablespoons milk (original recipe, linked earlier, called for 1 tbsp milk, but with dryer cheese I found more needed to make dough that would roll out)
Added to dough:
1/4 tsp garlic powder (I don’t actually measure when I cook so use your best estimation on how much is enough!)
1/2 tsp Italian seasoning
1/4 tsp red pepper flakes
Roll out to about 1/4 inch thickness. I used a pizza cutter to cut square shapes.
pepperoni, grated Parmesan cheese
I put mushrooms on some – any such variants would work to taste
Bake: 350 degrees for about 15 minutes.
